Spooky {Pumpkin} Spiced Muffins

Prep Time: 10 minutes   Bake Time: 18-20 minutes  

Oven Temp: 375 degrees   Yields: 12 muffins   



4 eggs

2 ripe bananas

1/4 cup of Nikki's Pumpkin Spiced Donut Coconut Butter

1/3 cup almond flour

1/4 tsp baking soda

3 tsp of organic honey

1 tsp of cinnamon

1/4 cup dark chocolate chips 



  • Pre-heat oven to 375 degrees
  • Microwave bananas for 1 minute to soften
  • Mix bananas, whisked eggs, honey, and Nikki's Pumpkin Spiced Donut Coconut Butter together, blend well
  • In a separate bowl, combine flour, baking soda, and cinnamon
  • Slowly add dry ingredient mixture to wet ingredients, while mixing.
  • Fold in chocolate chips 
  • Line muffin pan with baking cups and pour batter 3/4 full

  • Bake 18-20 minutes 

  • Let cool and decorate! For extra goodness, glaze muffins with Nikki's Coconut Butter. We recommend Vanilla Cake Batter! 


 But, BEWARE! These are spook-tacularly good!
